Congo Squares

Here is another cookie recipe from my Mother in law MaryJo. I have no idea why they are called Congo Squares! But they are really quite tasty! Very rich!





Congo Squares
2 3/4 cup flour
2 1/2 tsp baking powder
1/2 tsp salt
2/3 cup shortening
2 1/4 cup brown sugar
3 eggs
1 cup chopped nuts
1 1/2  cup chocolate chips

mix flour, baking powder and salt...set aside.  Melt shortening and beat in brown sugar.  Allow to cool slightly then beat in eggs very well.  Add dry ingredients.  Then mix in nuts and chocolate.  Grease a 9x13 baking pan. spread into pan (you may need to use a wet hand to spread as mixture is quite thick)  bake at 350 for 30 minutes.

  1. Maybe they started out to be Conga Squares, because they are so tasty you want to form a Conga line and then somewhere down the line they got lost in translation. Look yummy!
