Easy Crock Pot Split Pea Soup

Here is a quick easy soup for your crockpot. Nothing fancy but still perfect for a chilly evening.  Sometimes I will add smoked bacon, a rinsed can of black beans(at the end) for a change of pace. Also I have been known to add a little bit of heavy cream as well.  But you do whatever you like....you don't judge me I won't judge you ok?  :)





Easy Crock Pot Split Pea Soup


2 cups dried split peas
2 quarts chicken broth
2 onions, chopped
1 cup diced red potatoes
1 tbl butter
2 carrots, sliced
4 thick slices Canadian bacon or ham, cut in small pieces
salt fresh ground black pepper
Saute onions in 1 tbl butter until transparent. Add to crockpot. Add all other ingredients to crockpot.(Don't fill the crock pot too full, due to foaming)
Turn crockpot to high until it gets hot,then lower the heat setting to low and cook 8 hours. You may need to add a little water towards the end if it gets too thick.

Stir, adjust the seasonings and serve.
If you prefer a creamier soup ...take out 1/2 c. of the soup and puree in food processor,
then blend back into the soup.
